20 minute meals – Pan fried Cod with Chorizo

Serves 2 adults and 2 small people
Ingredients
- Cod loin (I used 2 large portions which was just enough for feed 2 adults a four year old and an 18 month old)
- Chorizo
- 1 red onion
- 1 small courgette
- 1 red pepper
- 2 tomatoes
- ½ leek
- rice
- Fresh basil
- Paprika
- Oil (I used rapeseed oil)
- Salt and pepper to season
Preparation
- Start cooking the rice. I use a quick cook everyday rice that is quick and easy for speedy meals like this one.
- Heat a small amount of oil in a pan on a low to medium heat and add slices of chorizo to the pan to allow the flavoursome oils to cook out. While this is happening finely slice the onion, add to the pan and allow to soften.
- Dice the courgette, tomatoes, leek and peppers (the finer you do this, the quicker they cook). Add the diced vegetables to the pan with the chorizo and add ½ tsp of paprika. Stir and allow to cook.
- Add a small amount of oil to a frying pan and add in some sliced chorizo. Allow the oils to cook out. Add the cod loin and cook on a medium heat for 5 mins, skin side. Whilst the fish is cooking, spoon some of the oil onto the fish to enhance the flavour.
- Season the fish and diced vegetables to taste and drain the rice.
- Serve the fish on a bed of rice with a generous heap of the diced vegetable and chorizo. Sprinkle freshly chopped basil over and enjoy.
Tips
Check the label of the chorizo carefully as many contain milk. I tend to use Lidl’s own chorizo, which is dairy free.
