Slow Cooker Meal – Sausage, Chorizo and Bean Casserole

Feeding a family is hard enough but feeding a family when your child has multiple allergies adds a new dimension to the challenge. I find slow cooked meals some of the easiest, especially when I have work or we are out for the day. This meal is quick and easy to prepare and a massive hit with the whole family.

Ingredients:
- 1 large red onion
- 125g of dried beans (I use Waitrose LOVE life 10 bean mix)
- 100g frozen sliced peppers (you can obviously use fresh but I find it more convenient to use pre-sliced straight from the freezer)
- 2 cloves of garlic
- 1 tin chopped tomatoes
- Sausages (I use Heck Naked Pork Sausages which are gluten free and skinless which I think work better in this recipe as the sausages absorb the flavour of the other ingredients and you won’t end up with soggy sausage skin at the end)
- 100g chorizo, diced into small pieces (I use a chorizo from Lidl which is dairy and gluten free)
- 500ml vegetable stock (I used Knorr Vegetable Stock Pots as they are gluten and soya free)
- 1 tsp of paprika
- Salt and pepper to season
- Parsley to garnish
Method:
- Rinse the beans and leave to soak in water overnight.
- Rinse the beans again and place in the slow cooker.
- Slice onion and add to the slow cooker along with the frozen sliced pepper, tin of chopped tomatoes, chorizo, crushed garlic and paprika.
- Make up the stock and add to the slow cooker. Mix the ingredients.
- Add the sausages to the mix (they can just lay on top).
- Cook on high for 3 hours or low for around 6 (though this will vary with each slow cooker).
- Add salt and pepper to taste.
- Serve with pasta or spaghetti – we always use the gluten free version.
