Salmon Parcel

This is a really simple yet showy dish that is family friendly but would also look great if you have someone round for dinner. I made a larger one of these for my mum’s birthday last year and everyone commented on how good it was – I didn’t let them in on just how easy it was though 😀

Ingredients

  • Gluten free puff pastry – I use Jus-Rol as it’s normally available at my supermarket and it’s free from all of my son’s allergens
  • 500g Salmon
  • Handful of leafy greens washed and finely sliced (I love either spinach or spring greens)
  • 2 shallots sliced finely (For ‘special’ occasions I use leek which add to the prep time but tastes fantastic with the salmon)
  • 100g rice (I love to use basmati with wild rice)
  • Vegan butter
  • Salt and pepper to season

Method

  1. Par boil the rice so it has only been cooked for half the suggested time, drain and run under cold water to cool. Set aside.
  2. *If you are using leek in this recipe, finely slice the leek and cook in a pan with melted vegan butter. Cook until the leeks have softened fully, season with salt and pepper to taste. Set aside to fully cool.
  3. Preheat the oven to 185࿀C
  4. Unroll the puff pastry onto a sheet of greaseproof paper and place the leafy greens into the middle section of the pastry.
  5. Sprinkle the shallots or cooled leeks evenly over the greens then top with the cooled rice.
  6. Carefully place the salmon on top and season with salt and pepper and a spoonful of vegan butter.
  7. Carefully bring the sides of the pastry to the middle to form your parcel and fold over the edges to create a seal. If egg is not an allergen, then brush with beaten egg as this will add a lovely glossy finish to your parcel.
  8. Place the parcel on to a baking tray and place in the oven for 25-30 mins
